This dish was inspired by papet vaudois, a typical dish from the French-speaking part of Switzerland, which has a big fat sausage on the top instead of cod steaks, and no bacon.
This is a Delia Smith recipe, from her book One Is Fun, which is unfortunately out of print.
This is another Greens recipe. It’s not as fiddly as it looks, and it’s very, very tasty. You’ll reek of garlic afterwards but, hell, it’s worth it. A good one to take along to a salad buffet.
